RECIPES

 
Fresh Raspberry Pie - from "Old-Fashioned Berry & Cherry Recipes"
INGREDIENTS:
1 9-inch pre-baked pie shell
8 cups raspberries
¼ cup water
3 tbsp. water
¾ cup sugar
3 tbsp. cornstarch
whipped topping
 

DIRECTIONS:
In a saucepan combine 4 cups of berries ¼ c water and sugar and bring to a boil.  Stir cornstarch into the water and stir into berry mixture.  Cook and stir one minute and remove from heat.  Gently stir in remaining 4 cups of berries.  Let cool to lukewarm.  Pour into pie shell.  Chill several hours.  Top with whipped topping.

 
Fresh Raspberry Ice - from "Better Homes & Garden" prizewinning recipe submitted by Shelly
INGREDIENTS:
1 quart red raspberries
1 cup water
1 cup sugar
2 cups cranraspberry juice
2 cups pink lemonade
 

DIRECTIONS:
Place washed berries in a blender and blend until smooth.  Strain through sieve and discard seeds.  Bring sugar and water to boil over medium and cook 10 minutes.  Cool completely.  Stir in lemonade, juice and berries.  Place in freezer for 1 hour or until it starts to thicken.  Blend until smooth.  Place in plastic container and freeze until firm for at least 4 hours.  An ice cream freezer can be used.

 
Tuxedo Brownie Squares - from "The Pampered Chef"
INGREDIENTS:
21 oz. low fat brownie mix
¾ cup seedless raspberry jam
2½ cups fresh raspberries
3 oz. white chocolate
16 oz. lite cream cheese
½ cup powdered sugar
¼ cup skim milk
8 oz. lite whipped topping
 

DIRECTIONS:
Prepare & bake brownie mix according to directions in 9 X 13 pan.  Cool completely.  Spread jam over brownie.  Sprinkle 2 cups of fresh, clean & dry berries.  Melt chocolate for 30+ seconds in the microwave until completely melted.  Cool slightly.  Add in cream cheese and powdered sugar.  Mix well and fold in whipped topping.  Spread carefully over berries.  Chill 1 hour or until firm.  Garnish with grated chocolate and remaining berries.  Store in refrigerator.  Makes 15 servings.

 

 

TRIVIA QUESTIONS

 
Why do raspberries have little hairs on them?

They are the remnants of the pistils, the female portion of the flower. They may help protect the fruit from insect damage. On some varieties these little hairs are more noticeable than on others. - from NABA website

 
Got stains?  How do you remove berry stains?

Whirlpool's laundry guide recommends the following: Do not use a soap on fruit stains.   Try soaking immediately in cool water.  Cover with a oxygen-type bleach and hot water.  Wait 15-30 minutes.  Wash.  For old stains,  sponge with white vinegar & rinse.  Then repeat above.  You can also try a commercial stain remover.

 
How can you enjoy berries all year round?

ENJOY a berry smile even in the Winter! Lay fresh berries on a cookie sheet until frozen solid.  Put in a freezer bag or tight sealing container.  Lightly rinse before enjoying!
